Sweet Summer Lemon Bars

Do you have a recipe that you’ve worked on and worked on until you can officially say “This is perfect.” That’s my lemon bar recipe. Lemon Bars were the first thing I ever learned to cook and I’ve spent the better part of two years taking them from great to OH WOW DELISH. They are a super special treat for my family and I’m happy to whip them up on very special occasions.

Today, you lucky ducks, I’m sharing my recipe with you!

The crust comes out all deliciously buttery and flaky, and the filling crusts a bit on the top like creme brûlée, with the inside remaining ooey, gooey, delicious! You need very few ingredients for to make these. Your stomach will thank you!

Here’s what you need:

For the Crust: 

  • 2 cups of flour
  • 1/2 cup confectioners’ sugar
  • 1 cup (2 sticks) butter, softened and cubes

For the filling:

  • 4 eggs
  • 2 cups sugar
  • 1/3 cup lemon juice
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Confectioners sugar for dusting

Preheat the oven to 350 degrees.

For the crust: Combine ingredients until they resemble coarse meal or sand. Press the mixture into the bottom of a 13″ x 9″ pan. Bake until golden brown, about 20 minutes. Take out of the oven and let cool.

For the filling: Beat all ingredients together. Pour the filling into the baked crust and put the pan back into the oven. Bake until the filling sets, about 25 minutes. Let the pan cool before cutting into squares. Dust the squares with confectioners sugar.
