This Christmas, there was only one thing I really really wanted: A KitchenAid Stand Mixer. Santa made his list and checked his list twice, and my Christmas wish was granted, three times. But we’ll get to that in a minutes.
The first thing I had to do with my pretty new toy was make a big batch of cookies, naturally. And these cookies are beyond amazing.
Before I get started on sharing the recipe for my chocolate chocolate mint cookies, let me tell you the story of my KitchenAid Stand Mixer. I must have been really good this year—not only did I receive the gift of my dreams, I got three of them.
When Justin and I got married, we received a KitchenAid mixer. We were so excited, but it wasn’t in the color we wanted. We went through this huge process to get it exchanged, received a check to buy a new one, went on our honeymoon and subsequently spent the money for our new mixer on a whole different kind of mixer (+ alcohol).
This Christmas, when everyone asked me what I wanted for Christmas, I told the story of the KitchenAid Stand Mixer that got away. I did so to drop hints to Justin in the hopes that he’d be the one to get one for me.
He did. Go Justin! Knowing we would spend Christmas at my parents’ place in Louisiana, Justin and I opened our big gifts for each other the weekend before. On Christmas Eve, Justin was sitting with his family while we were at their place for dinner talking about how we exchanged a few presents earlier in the week. Justin mentioned the mixer and his cousin gave him a look. It’s a look most women recognize.
When we opened gifts later that night, I was the proud owner of a brand new, Barbie Dreamhouse pink KitchenAid stand mixer.
Flash-forward to Christmas Day, I was sitting with my mom telling her my sad sad tale of the two KitchenAid stand mixers and she made the exact same face Justin’s cousin, Jennifer, made. Christmas morning came, and another Kitchen Aid Stand Mixer came into my possession.
I felt so blessed by everyone’s generosity! Now back to the cookies.
You guys, these cookies are outrageous. Soft, gooey, fudgey, chocolaty—and the mint adds really brings these home.
This recipe will make about 16 large cookies, or 10-12 smaller cookies.
Here’s what you’ll need:
- 1 stick + 2 tbsp butter
- ¾ cup brown sugar
- ¼ cup sugar
- 1 egg
- 1 ½ tsp vanilla
- 1 cup flour
- 2/3 cup baking cocoa
- ½ tsp baking soda
- ¼ tsp salt
- Nestle Mint & Dark Chocolate chips – about half a bag
Cream the butter and sugars together until well combined. Add in the egg and vanilla and mix until well incorporated.
With your mixer on a low speed, slowly mix in the flour, cocoa, baking soda and salt. Add the mint chocolate chips.
Form the dough into tall balls and place them on a baking sheet. Place in the refrigerator and let the dough cool for at least 2 hours.
When you’re ready to bake, preheat the oven to 350 degrees. Bake the cookies for eight minutes. Let cool and enjoy.
For a delightfully sinful treat, add a scoop of ice cream between two cookies for Mint chocolate ice cream sandwiches!

Oh my goodness — you know have a KitchenAid Stand Mixer (x3) story that’s even crazier than the first! You were definitely on Santa’s good list this year. 🙂 Those cookies look delicious, and that’s coming from someone who is cookie-ed out! At our annual family exchange this year, we each made and received ten (!) dozen cookies . . . and yeah. I’m back on Weight Watchers now. 🙂
